Seafood Gumbo

Ingredients
  • 4 tbs vegetable oil
  • 225 tbs andouille sausage, sliced
  • 1 red onion, peeled and finely diced
  • 2 stalks celery, peeled and diced
  • 1 green capsicum, diced
  • 2 tbs flour
  • 2 tbs Cajun seasoning
  • 1L chicken stock
  • 2 dried bay leaves
  • 450g mixed seafood

Method
  • Step 1In a pot over medium-high heat, add 2 tablespoons of oil and sausage. Once browned, remove with the slotted spoon and set aside. Add the rest of oil and saute the onions, celery and green capsicum until translucent.
  • Step 2Add the flour and cajun seasoning. Cook while constantly stirring for about two minutes or until the vegetables turn light brown. Stir in the stock and bay leaves. Simmer for about 10 minutes.
  • Step 3Tip in the sausages and seafood. Let it simmer for about 5 minutes, or until the seafood is cooked.
