Step 1In a pot over medium-high heat, add 2 tablespoons of oil and sausage. Once browned, remove with the slotted spoon and set aside. Add the rest of oil and saute the onions, celery and green capsicum until translucent.
Step 2Add the flour and cajun seasoning. Cook while constantly stirring for about two minutes or until the vegetables turn light brown. Stir in the stock and bay leaves. Simmer for about 10 minutes.
Step 3Tip in the sausages and seafood. Let it simmer for about 5 minutes, or until the seafood is cooked.
